The perfect carrot cake for the Easter holidays. My picky eater sometimes not so fan of carrots and this is the best way to provide nutrition to her which is totally sugar-free and guilt-free. If you want to keep it for a long time, you can freeze the carrot cake in an airtight container. I prefer to make a small batch. However, you can definitely double the recipe. Making cakes itself is an art and definitely a matter of all ratios. Here I come up with a very simple homemade recipe where you don’t have to put much effort. The bonus is it’s completely sugar-free and healthy. Enjoy this cake because not only it’s healthy but delicious too.
I haven’t tried banana carrot cake muffins but i think it should work fine.
Bananas – 4 Ripe
Carrots – 1 Large(Shredded)
Almond Flour – 1/4 Cup
All Purpose Flour – 3/4 Cup
Oil – 1/2 Cup
Eggs – 2
Baking Powder – 1 Teaspoon
Baking Soda – 1/2 Teaspoon
Bake at 175 degree for 45 minutes -1 hour.
